Vibrant is the word here! there is interesting complexity of fruity, sour and spicy notes here. Salinity is gentle, as also the level of sourness from ferment. The ginger adds a light warmth and the turmeric, while providing a vibrant colour, does not bully other ingredients, but stands back allowing the cabbage to shine. A well made and well balanced sauerkraut that we enjoyed a good deal.
The beautiful, vibrant yellow colour and fresh ginger and pineapple on the nose were very appealing. This sauerkraut had great crunch and a lovely balance of sweetness from the pineapple and acidity, leaving a fresh complex flavour on the palate. A collection of strong flavours is well balanced in this delicious ferment.
