This is a Vegan Smoked Salmon Recipe that you will absolutely love.

“I absolutely love this flavour with some smoked salmon and recently I started making this vegan version with carrots and I am absolutely obsessed. Feel free to have the original Salmon version but if you are looking for something a bit different and surprisingly delicious then make this recipe. Carrots are a great source of soluble fibre and help you to feel full for longer periods and the combination with the Seedy Snacks Everything Seed Crackers give you the protein combo that you need. It is not a myth that carrots are good for your eyes. Carrots contain lutein which can help protect your eyes from degenerative diseases as you get older.”
Ingredients
4-5 medium carrots
About a cup of salt (don’t worry- you will not be consuming this amount of salt)
1 tablespoon of mixed dried herbs like thyme, parsley and/or oregano
2 tablespoons of olive oil
1 tablespoon of Japanese Rice Vinegar
1 tablespoon of Soy Sauce
A pinch of crushed Seaweed Flakes (optional- to create that salmon taste if desired)
Method
1) Peel the carrots and place them in a oven dish on a bed of salt and sprinkle them with the mixed herbs. Shake the pan slightly to gently coat the carrots
2) Bake the carrots at 170 degrees Celsius for anywhere from 45-80 minutes depending on how thick your carrots are. You want to be able to easily pierce them with a fork but not be mushy.
3) Once baked allow to cool and rub off the salt with a clean towel. Peel the carrots into thin strips using a peeler or a knife.
4) Place the strips into the marinade and mix to coat well. Put them in jar or airtight container and let it sit the fridge for a couple of hours at least before enjoying with your everything seeded crackers or a vessel of your choice. I love spreading some cream cheese on the crackers and topping them with the cured carrots and some pickled onions or even some kimchi if you have.
