Our speakers will discuss how chefs and nutritionists seamlessly integrate locally sourced, seasonal, and sustainable ingredients into enticing breakfast menus. As well as this we will be engaging with practical strategies to minimise food waste within your household, delving into the ethical dimensions of food production, exploring fair trade practices, and more.

Bettina Campolucci Bordian acclaimed plant-based chef, is a fervent advocate for plant foods. With her Danish-Tanzanian-Bulgarian roots, she uses local and seasonal produce to create dishes that nourish the body and soul. Her culinary talents are showcased in her three well-received cookbooks: Happy Vegan Food7 Day Vegan Challenge, and Celebrate. The latter book, as the name implies, is a joyous collection of plant-based recipes that everyone can enjoy.

Dr Federica Amati works as Head Nutritionist and Head of Science Communications for personalised health company, ZOE. She works clinically as the Head of Nutrition for Well Founded Health. Dr Fede’s approach focuses on improving overall dietary quality following the principles of evidence-based, personalised nutrition science for health and disease prevention throughout the life course. Alongside her research and nutrition work, Dr Fede has written two books, Recipes for a Better Menopause and Every Body Should Know This (out April ‘24, Penguin).

Alla Ouvarova Founder & CEO of Two Chicks graduated from UCL with a degree in Economics, and soon after, joined forces with friend Anna to create Two Chicks. Two Chicks hatched in Selfridges in 2007 to introduce the first liquid egg white into the UK retail market, that had previously only been available in the US. Two Chicks products are now available in every UK supermarket, as well as internationally. Alla and Anna launched Future Female Entrepreneur in 2022 to inspire the next generation of female entrepreneurs, and to help ensure that more businesses are created and led by women.

Nicola Moore is a seasoned nutritional therapist with a forward-thinking approach in the nutrition and lifestyle medicine sector. Since the early 2000s, she has honed her skills, serving as a senior academic at the Institute for Optimum Nutrition (ION) for over 12 years, and as the Head of Clinics for four years. A sought-after speaker at conferences and events she regularly contributes her expert opinions and advice to mainstream media.
