Happy March and Spring with a healthy vegan kimchi recipe!
March has arrived, and while the new month may bring longer days and more sunshine, we’re still craving some comfort. And there’s nothing more comforting than the nourishing flavours of this Vegan Kimchi Noodle Soup Recipe.
This recipe is packed with gut-friendly and immune-boosting benefits. Naked Kimchi & Co takes centre stage in this recipe, with their vegan gluten-free kimchi with turmeric and seaweed acting as important fuel and delivering ultimate taste results.

Begin by…
Sauté your vegetables by heating a tbsp of oil over a deep pot on medium heat. Then add in the shallots, JUX Garlic Pieces, JUX Ginger Powder. Sauté for 2-3 minutes or until the aromas start to develop.
Once the aromatics have been sautéed, add in Naked Kimchi Co Vegan Kimchi with Turmeric ,mushrooms, tofu (or a plant-based protein of your choice), and Bonraw’s Natural Sweetener Silver Birch Granulated.
Season with…
Season with Poon’s Extraordinary Chilli Oil an aromatic chilli oil, with the intense flavours of salted black beans. Add some extra salt if needed, and finish with water.
Simmer…
Let your broth come to a simmer, and then cover the pot and leave for another 35-40 minutes. Towards the end of the simmer, you can also add in your greens of choice. Simmer for another 3-5 minutes before removing from the stove.
And to serve…
In a separate pot, cook your noodles and drain them before preparing them to serve with the soup. Pour your kimchi broth on top, with the mushrooms, tofu, and greens. Garnish with chopped green onions for some added freshness, then enjoy!

- 1 tbsp Manayi Extra Virgin Olive Oil
- 1 shallot (finely diced)
- 1 tsp JUX Garlic Pieces,
- 1 tsp JUX Ginger Powder
- 1/2 cup Naked Kimchi & Co Vegan Kimchi with Turmeric
- 1 cup mixed mushrooms (diced)
- 1 block tofu (plant-based protein of choice)
- 2 tbsp Poon’s Extraordinary Chilli Oil
- 1 1/2 tbsp Bonraw’s Natural Sweetener Silver Birch Granulated
- 3/4 tsp Orsay Natural Sea salt
- 3 cups water
- Greens of your choice
- 100g dry noodles
- 1/4 cup green onions
