Description

An aromatic chilli oil infused with the intense flavours of salted black beans. Developed by Masterchef Bill Poon, bringing exceptional Chinese pantry essentials to your kitchen.

Bill Poon, has been making batches of this for his friends for the longest time. Their daughter served it to Helen Goh at a steam-boat dinner she hosted and she almost licked the jar, asking if she could buy some. That's when they decided to bottle it. It's unusual in that it uses salted black beans which gives the oil a real depth and intensity beyond just heat.

Use as you would any chilli oil. Simply stirred through some thick wheat noodles, wet still from the noodle water, it's the Chinese version of spaghetti aglio e olio.

"Tell me you don't think this the most exquisite set of sauces you could have in your pantry? My very discerning friend @amy__poon has been working and tweaking and distilling these condiments, but I reckon they actually flow out of her veins. If you've ever met her or eaten any of her cooking, you'll know this chick doesn't do things by halves. Seriously a labour of love."

About Poon's London

London, United Kingdom
My father started in the kitchen young. In Hong Kong, he trained with a Swiss pâtissier and in the mid-Sixties he came to England in pursuit of my mother. Three years later they opened the iconic Poon’s of Covent Garden at 41 King Street (now a Burberry store.) The great and the good dined there – from Mick Jagger to Barbara Streisand. In 1980 my father was awarded a Michelin Star. Restaurants in Geneva and The City followed.

My parents retired in 2006. I have worked in all my parents’ restaurants and swore I would never go into the business, but what chance does one stand against kismet? So, I bring you my Chinese kitchen from the depths of my heart & my family’s hearth.
