This one’s for the spice lovers – a very hot chilli sauce with deep umami notes from fermented shrimp paste. We use both fresh and dried chillies to create a rounded heat that both builds and lingers and balance it simply with gula melaka, raw coconut sugar found in Malaysia and pink himalayan salt
