Chilli and Lime Seed Crackers are zesty and spicy and have that perfect chilli kick but sometimes you need a little something something to cool down your taste buds. Try this tzatziki and you won’t regret it. Coconut Yoghurt is a great source of healthy fats and is great for the gut and a great alternative if you can’t tolerate dairy. The coconut is not overpowering at all and is mellowed out by the cucumber and dill.
Serves 4-6 people
Ingredients
400g Coconut Yoghurt (I use Cocos Organic as I find that it has the same lush creaminess as Greek Yoghurt- Feel Free to use your preferred brand or dairy).
1 cucumber- skin removed and grated
1 clove of garlic
2-3 tablespoons of organic apple cider vinegar with the mother
A good handful of dill (optional)
2 tablespoons of good quality extra virgin olive oil (I use a good Greek brand)
Salt and Pepper to taste
1 teaspoon of dried oregano (optional)
The Zest of 1 lemon and the juice to taste (optional)
Method:
1) Squeeze out the cucumber of as much excess water as possible and allow it to sit in a bowl with the garlic, 1 tablespoon of white wine vinegar, the oregano and a good pinch of salt. Let it sit for 5-10 minute whilst you get your other ingredients ready.
2) In another bowl combine the yoghurt, 1-2 tablespoons of white wine vinegar. (Start with 1 and adjust according to your taste), the lemon zest and some lemon juice. (I like the tartness the vinegar and lemon adds, but make this your own) Mix this until it is combined, and creamy.
3) Squeeze out the cucumber once more and mix it into the yoghurt mixture and combine well.
4) Finely chop the dill and add that into the tzatziki. Taste and adjust with salt and pepper. Enjoy with Seedy Snacks Chilli and Lime Seed Crackers or a vessel of your choosing.
