Our beautiful Grey Oyster (pleurotus ostreatus) mushrooms are an absolute staple in so much of our cooking at home. They are packed full of minerals and antioxidants, and they crisp up beautifully in the pan. You can't beat them fried in butter, salt, pepper and herbs, with garlic added at the very end of the frying process, loaded upon toast - heavenly!
We send our oysters as a trimmed cluster, picked at the pinnacle moment of ripeness, fresh as a daisy and remarkably clean.

Tucked away right on the Wales-England border, high up in the lush green hills, we rent part of a disused dairy farm which closed twelve years ago. We converted the old bottling rooms and laboratory into our incubation and fruiting rooms, where we grow a variety of wood-loving mushrooms. Unlike "normal" mushrooms, there's no manure, and no dark caves in our process! Rather, our woodland varieties need an abundance of fresh air, mist and light to grow. Packed full of goodness, they're also totally delicious, providing heaps of umami to any dish.
