It is made following a similar process to that of a typical Mozzarella but it's paste is of a firmer, slightly less moist texture, ideal to be mixed with other ingredients and designed to release it's flavour while melting. It's a versatile ingredient, that can be also used in a variety of other dishes adding an unmistakable taste. A fundamental yet overlooked ingredient for any Pizza fanatic.
