Mungo has developed a range of simple dried seaweeds. Kelp (Laminaria Digitata) or sometimes referred to as ‘Irish Kombu’, is a versatile seaweed and is a wonderful flavour enhancer for soups and stocks. It is most commonly used to make dashi broth as well as being added to beans when cooking. While its texture is a bit tough in dried form, it softens up and adds great flavour to braises and stews.
