This is a speciality from the region of Puglia,Italy. It is a cow milk Mozzarella on the outside with a fresh cream filling in the inside mixed with small shreds of mozzarella paste. Entirely hand made, it needs to be stored at around 4-6°C and consumed within the first 7-10 days of being produced. It is typically served on it's own, with little seasoning or olive oil or incorporated into more sophisticated and textured dishes.
Again, consume as fresh as possible.
