We are Karim, Zee, and Layth - the co-founders of Fil. Brought together by heritage, family, and friendship, we set out to share the vibrant culture of Palestine as we know it best: through food. As two brothers and their childhood friend, our journey began with a craving for authenticity. At the heart of Fil is Shatta; the fermented, fiery, flavour-packed chilli condiment from Gaza. A staple on most Palestinian tables, Shatta lives alongside salt, pepper, and extra virgin olive oil, its recipes lovingly passed down through generations. However, we struggled to find one that captured the freshness and depth we grew up with. So, we made our own. Today, Fil crafts small-batch, high-quality Shatta that honours its roots, with a contemporary twist. Bursting with freshness, flavour, and heat, it’s as versatile as it is cultural.
