A regular trip to the local Glasgow Fruit Market lets us source fresh ginger, grading and ensuring the highest quality at purchase. We rush this fresh ginger home, peel it, wash it roughly and leave it to soak, softening and releasing her flavours.

Ginger is one natures best immune boosters, providing lots of health benefits, this root has been used for centuries in many “cures”. Half of Govan will swear by a glass of Ginger on a Sunday morning.

Taking the soaked ginger we begin drying, chopping, and dicing by hand. Then we cold press the root, to retain all the healthy antioxidants, flavours and oils that set our Raw Sodas apart from the crowd.

With the ginger juiced it is vacuumed and racked overnight in a technique learned from the champagne production process, we found this is the best way to separate the chalky sediment whilst retaining all the healthy vitamins and leaving the complex characteristics of the flavours undamaged.



Separately we simmer Cassia and Pimento to draw out all the aromatics and some of the weight of these spices and berries. To this, we pressure infuse Cardamom into freezing cold Scottish Freshwater bringing out the cardamom's delicate flavours and bringing polish to the product.



The final note is added to the hand batched blending, a candied lemon zest, to brighten up the mix and deliver a refreshing mouthful of healthiness in a can.

Finally its filtered, carbonated, canned, pasteurised, boxed again all by hand, and all with our passion.

Ever wondered what goes into soft drinks? Well we found out, and the picture wasn’t pretty. We dug a little deeper and found most global producers were telling porky-pies in their marketing. It seems daft to us that a ‘naturally flavoured’ lemonade has never seen a fresh lemon in it’s life so we got to work.

Sickly sweet, artificially flavoured, mass produced cans dominated the market but we wanted to go a different direction; fruit from the farmer, and flavour from the fruit.

After well over a decade spent in winemaking, bartending and brewing we began looking for a positive outlet for our unusual skill set, moving away from alcohol and focussing on flavour extraction. Rapscallion started life trialling our fresh fruit soft drinks down an alleyway in Glasgow back in 2016. Now we have grown to a team of five supplying some of the UK’s leading independent venues with our fruit to can ethos.
